Monofloral Dzidzilché Honey – The Sacred Amber of Yucatán

In the heart of the Yucatán Peninsula, where the earth speaks Mayan and ancestral secrets are whispered among the flora, there is a honey as unique as the tree it originates from: Dzidzilché honey. Known to the ancient Mayans as ts’iits’ilche’, or "the tree that is peeled," this native species—with its distinctive, shedding bark—not only shelters surrounding wildlife, but also offers a nectar deeply rooted in this land.

Between March and June, during the spring, the Dzidzilché tree, adorned with its small mint-colored flowers, becomes a magnet for the bees, our sacred xunáan kab. Though the pollen is scarce, it is gathered with devotion and later transformed by the bees into a distinctive liquid gold.

The Túul Kaab Dzidzilché honey is a tribute to the wild and exotic richness of Yucatán. Its mystical, dark amber hue reveals an intense floral aroma with lingering caramel notes. This captivating flavor has won over some of the world’s most discerning palates, not only for its unique organoleptic profile, but also because it embodies the passion of the local beekeepers who, with every harvest, help sustain the delicate balance of this ancestral ecosystem.

Whispers of the Dzidzilché in every drop:

Color: Clear to dark amber. A reflection of the Mayan sun.

Flavor: Unmistakably sweet, with a slight tannic edge that evokes the richness of the soil.

Properties: A natural balm with antiseptic, antimicrobial, and healing virtues. Ideal for the well-being of both body and spirit.

Suggested Pairing: This is a perfect match for desserts featuring fruit and also works well when contrasted with soft cheeses and fragrant teas.

  • Fresh, sweet fruits: bananas, strawberries, raspberries, pears, pineapples
  • Dried fruits and nuts: almonds, dates
  • Soft and semi-aged cheeses: Gouda, provolone
  • Light meats: cold cuts
  • Aromatic teas: jasmine green tea, black tea

In every jar of Túul Kaab, Dzidzilché honey becomes a bridge between past and present—an invitation to taste the tradition and purity of an ancestral legacy that we honor in every drop.
